Can I Make The Chocolate Meringue Truffle Cake Without Alcohol?

Nigella's Chocolate Meringue Truffle Cake (from FEAST) has a chocolate meringue base that is filled with a truffle-like ganache mixture. The ganache is flavoured with rum, though you could use whisky, brandy, bourbon or any other liqueur or spirit that you think would match well with chocolate.

If you want to avoid alcohol in the filling then replace the alcohol with 60ml (1/4 cup) extra cream and add 1 tablespoon of good-quality vanilla extract instead. You could use an alcohol-free rum flavouring instead of the vanilla, but we find that some of these have a slightly artifical taste so we would prefer to use vanilla extract.
