Is there a way to make dairy free buttermilk? I’m struggling to find it in supermarkets and I want to make Nigella's Chocolate Sheet Cake.

Our answer

Nigella's Chocolate Sheet Cake has an easy to make one saucepan sponge. It is also slightly different to a regular chocolate sponge cake, as the icing is poured over the still warm cake and the two meld together to give a moist, fudgy chocolate cake.

The recipe uses a home-made buttermilk made from regular milk that is soured slightly with vinegar. You can replace the milk with an unsweetened plant-based alternative and soy is one of the more popular milks to use in this way as it has a very similar fat content to semi-skimmed milk. Oat and nut milks should also be fine. However, we would prefer to avoid using rice milk for this recipe as it has a slightly thinner consistency and sometimes can separate out into solids plus a very watery base.
