For Passover I have to make a cake without leavening. Is the Clementine Cake good if you omit the baking powder? If I beat the egg whites will that be enough to make it rise?
Our answer
Nigella's Clementine Cake (from HOW TO EAT) is a gluten-free cake that is moist and aromatic. It contains a small amount of baking powder but the cake itself is not light and spongy.
We suspect that it is probably easiest just to omit the baking powder from the recipe as the cake should be fairly dense and damp anyway. We don't think that it would be a good idea to whisk all 6 egg whites and fold them in as this would make the cake more like a souffle and it would rise a lot in the oven and then sink back quite dramatically as it cools. If you did want to add some whisked egg whites then we would suggest whisking just one or two egg whites and folding these in. However, please note that as we have not tried the cake this way ourselves we are unable to guarantee the results. You might also like to think about trying Nigella's Apple And Almond Cake, which is a combination of apples, almonds, sugar and eggs and doesn't include any baking powder.
