Could I possibly make the Cumin Seed Cake with Almond flour? Sadly, I have recently become gluten intolerant.
Our answer
Nigella's Cumin Seed Cake (from AT MY TABLE) is a plain loaf cake that is scented with whole cumin seeds and it is a cake that is perfect with a cup of tea or coffee at any time of the day. Unfortunately we have not tried the cake in gluten free form, but we feel that using all almond flour (ground almonds or almond meal) may make the cake too oily. Often a mixture of a plain (all-purpose) gluten-free flour and almond flour will give better results.
However, Nigella does have a some gluten-free loaf cakes that you may like to try. The Gluten-Free Banana Bread or the Chocolate Tahini Banana Bread are both cakes that you would not guess are gluten-free. Also the Marzipan Loaf Cake is ideal if you like the flavour of almonds. You may be able to add the cumin seeds to this cake if you really wanted to add the cumin flavour (if using a food processor add the seeds at the end and pulse a couple of times to mix them in, so that the seeds remain whole), though as we have not tried it ourselves we can't guarantee the results.
