Can I use gluten free flour in place of normal flour in the Easy Almond cake? Can I freeze the cake ? If so for how long?

Our answer

Nigella's Easy Almond Cake (from HOW TO BE A DOMESTIC GODDESS) is made with marzipan, a large amount of eggs and self-raising flour. We have not tried the cake with gluten-free flour so although we suspect that it would be possible to use it as a substitute we can't guarantee the results. Use a gluten-free flour blend that is for baking and if you can't find a self-raising version then use a plain/all-purpose gluten-free flour and add 2 teaspoons of gluten-free baking powder.

The baked cake can be frozen for up to 3 months. Let it cool completely then wrap the cake tightly in a double layer of clingfilm (plastic wrap) and a a layer of foil before freezing. To thaw the cake, unwrap it and leave it on a wire rack in a cool place for 4-6 hours.
