My husband is lactose intolerant. What can I use as a substitute for butter in the Flourless Chocolate Brownies? Would lactose free butter work? It has a different consistency to normal butter.
Our answer
Nigella's Flourless Chocolate Brownies With Hot Chocolate Sauce (from NIGELLA EXPRESS) are rich and squidgy brownies made with ground almonds (almond meal). As the brownies do not rise much and have a squidgy texture, we suspect that lactose-free butter would work in this recipe. Alternatively you could use a vegetable-based margarine. If you use this you should use a hard margarine rather than a soft, spreadable one, but bear in mind that the flavour will not be quite as good if margarine is used.
We would avoid using coconut oil or any vegetable oils as these have a higher fat content than butter or margarine and could make the brownies slightly greasy, especially when combined with the ground almonds. The hot chocolate sauce is not dairy-free, but you should be able to substitute your favourite dairy-free cream alternative as long as it is one suitable for cooking. However we would mention that as we have not tried these alterntive ingredients, we are unable to guarantee the results.
