Our answer

Nigella's Gluten-Free Banana Bread (from COOK, EAT, REPEAT) is made with a combination of rice flour and ground almonds (almond meal). Using ground nuts with the rice flour gives the bread a good texture and the nuts also add moisture, helping to balance the more absorbent nature of the rice flour.

Unfortunately there is not a good non-nut alternative for the almonds as using another gluten-free flour will change the balance and could make the texture of the banana bread heavier and closer. However, if you are able to eat sesame seeds then we would suggest trying Nigella's Chocolate Tahini Banana Bread, which uses rice flour and tahini and does not have walnuts mixed in. Tahini should only be made from ground sesame seeds but some brands may have added vegetable oil (which could include peanut oil), so check the label before using to make sure that it is completely nut free.
