Hello, I am wondering if it would it be ok to use minced veal instead of lamb for the koftas and use the other ingredients in the recipe?

Nigella's Lamb Kofta With Garlic Sauce (from AT MY TABLE) are lamb patties that are gently spiced with cumin, coriander and allspice. They are made with lamb mince (ground lamb), though it would be possible to use other minced or ground meats.
Veal has a fairly mild flavour and will go well with the spices in the recipe. If you are using veal then we would suggest using rose veal (also known as rosé or ruby veal) as these calves are reared to much higher welfare standards. Most rose veal mince has a fat content of around 15%, which is fine for the koftas. If the fat content is lower then the koftas may be slightly drier than if they were made with lamb and it may be worth considering using a mixture of ground pork and veal (or in the US a meatloaf mixture of beef, pork and veal) instead.
