Can I Make The Sticky Toffee Pudding With Less Sugar?

Asked by NBATES. Answered on 9th December 2024

Full question

I made the Sticky Toffee Pudding yesterday and it was too sweet, is there any way I could reduce the sugar ? If so by how much? And would it effect the taste/texture. Thanks.

Our answer

Nigella's Sticky Toffee Pudding (from AT MY TABLE) is made with dates, treacle and a small amount of dark brown sugar. The addition of the treacle gives it a slightly dark, bitter edge and makes it less sweet than some other sticky toffee puddings.

Unfortunately we don't think that it is possible to reduce the sugar in the sponge. The majority of the sweetness comes from the dates and they are integral to the texture of the sponge. Reducing the treacle and sugar would make the sponge less moist and also we feel that it would start to taste a little "flat". You could maybe only make one quarter of the sauce just to pour over the top of the sponge and not serve any extra sauce alongside, but it becomes much less of a "sticky toffee" pudding like this.
