I can't wait to make the vegan gingerbread. If I omit the prunes, will that impact how the cake turns out or its moistness? Any suggestions for an alternative? Thank you.

Nigella's Luscious Vegan Gingerbread (from COOK, EAT, REPEAT) is a moist and sticky gingerbread made without eggs. The batter includes chopped prunes, which add sweetness but also act to an extent as an egg replacer.
You may be able to use an alternative egg replacer but we have not tried any alternatives, so regret that we are unable to make any suggestions. However, we would mention that if you chop the prunes finely then they do disappear into the cake as it bakes and you get a uniform texture without any "bits".
