Our answer

Nigella's White Chocolate And Passionfruit Mousse (from NIGELLA SUMMER) has fresh raspberries topped with a mixture of melted white chocolate, eggs and passionfruit seeds and pulp. As the mousse sets, some of the passionfruit juice sinks down, melding with the raspberries and making a sweet-sharp contrast to the mousse.

The passionfruit seeds provide some texture and contrast to the rest of the dessert. However, you could remove the seeds by sieving or straining the passionfruit seeds and pulp scooped from the shells. If you do this then make sure that you press on the pulp in the sieve or strainer to extract as much of the juice and pulp as possible. You may also like to use 11 passionfruit rather than 10, to compensate slightly for the pulp that will be left in the sieve, but as we have not tried this recipe ourselves without the seeds, we are unable to guarantee the results.
