Passionfruit Parfait

Heat sugar and half apple juice over medium heat till sugar has dissolved. Bring to boil. Remove from the heat and stir in the passion fruit pulp. Whisk for a minute and then strain, reserving 10 ml of the pips. Discard the rest. Place the remaining apple juice into a saucepan. Add the gelatine and warm over a low heat until it dissolves. Stir into the passion fruit mixture. Chill for 30 minutes. Stir in the seeds. Divide 3/4 of the mixture between 6 parfait glasses. Chill. Place the remaining mixture in a bowl. Beat with an electric mixer until doubled and pale. Spoon on top of each parfait and chill for 15 minutes.
