I'm making the Spatchcocked Sesame Miso Chicken. Is 7½ hours in marinade long enough before roasting the chicken?
Our answer
Nigella's Spatchcock Chicken With Miso And Sesame Seeds (from AT MY TABLE) marinates a whole spatchcocked (or butterflied) chicken in an Asian-inspired mixture of sesame oil, white miso, garlic, ginger and soy sauce. A spatchcocked chicken is one that has had the backbone removed and is then flattened, which means that it cooks quickly and evenly.
Nigella suggests marinating the chicken overnight, which usually means 8-12 hours. However, if you don't quite have that long then it should not matter too much and the chicken will benefit from even a short marinating time. So 7½ hours marinating time should be fine. Make sure that you allow an hour for the chicken to stand at room temperature, as this helps the chicken to cook evenly.
