I use Nigella's Christmas pudding recipe with Australian raisins (not sultanas) and it is wonderful. I hate grating the vegetable shortening. (Copha in Australia). Would I be able to measure out the required amount and melt it, then cool and while still liquid, add to the mixture please?
Our answer
Nigella's Ultimate Christmas Pudding (from NIGELLA CHRISTMAS) is made with suet, which in the UK can be bought in shredded form from the supermarket. However, it is difficult to find outside of the UK and we found that grating frozen vegetable shortening is a good alternative.
This would be our preferred method, though if the shortening comes in a block then it is much easier to freeze. If this is too difficult then it is possible to melt the shortening and mix it into the pudding batter. But you do need to make sure that that all of the other ingredients are at room temperature, so that the shortening can be mixed in easily and be distibuted evenly through the pudding. Christmas Puddings are usually made on Stir-Up Sunday, which this year is 20th November 2022.
