Full question
Can you pipe the frosting on the Devil's Food Cake instead of spreading it?
Our answer
Nigella's Devil's Food Cake (from KITCHEN is a rich chocolate cake that is topped with a luscious dark chocolate frosting. The frosting is made from butter, chocolate, sugar and water and although it is very runny when first made, it thickens as it cools to become a soft, spreadable coating.
We have not tried piping the frosting ourselves as it remains slightly soft even when cool. If you did want to pipe it then you would have to wait until the frosting has thickened enough to hold a shape. As it is in some ways similar to a ganache, it could help to whisk the frosting to incorporate air and make it thick enough to pipe. But you would have to be careful when piping as the warmth from your hands could cause the frosting to melt and become too soft again. We would prefer to just slather the cake with a generous layer of the frosting and use a palette knife to create some swirls.
