Full question
Hello. The Marzipan Loaf Cake sounds delicious! Is the ⅔ cup of flour (USA) correct? It seems like a very small amount to achieve a decent size loaf cake as pictured. I wanted to confirm before I went ahead and made the cake. And can I also reduce the amount of cardamom? Thank you.
Our answer
Nigella's Marzipan Loaf Cake (from COOK, EAT, REPEAT) is made with a combination of plain (all-purpose) flour and marzipan or almond paste. Gluten-free flour can also be used instead of regular flour.
The quantity of 75g (⅔ cup) of flour is correct. It may not seem that much but it is worth remembering that marzipan is mainly made up of ground almonds (almond meal or almond flour), which are often used as a substitute for flour. Once you take this into consideration, the quantity does not look quite so odd for a 450g (1-pound) loaf tin (pan). The cardamom in the cake gives a certain spicy warmth that goes well with the almonds, but if you don't like the flavour of cardamom then the quantity can be reduced or you can omit it completely.
