What is the best way to reheat leftover Courgette and Chick Pea Filo Pie? (It was delicious by the way. Another home run for Nigella!)
Our answer
Nigella's Courgette And Chick Pea Filo Pie (from HOW TO BE A DOMESTIC GODDESS) has a warmly-spiced filling made from rice, chickpeas, courgettes and onions that is wrapped in crisp filo (phyllo) pastry crust.
Unfortunately we prefer not to recommend reheating leftovers of this pie as cooked rice needs to be treated very carefully. In addition, as the rice has in effect already been cooked and then reheated (when it was baked in the pie), you should not reheat it again for a second time. It is also difficult to get filo pastry to crisp up on reheating. We would suggest that leftovers are eaten cold, as long as the pie has been refrigerated within 2 hours of baking and not stored in the fridge for longer then 3 days.
