I have made Banoffee Cheesecake. I used light brown sugar but the top of the cheesecake is not the same yellow colour as in the photo. Also I cookedit longer as was worried it was not fully cooked. Can I also serve same day? The recipe says to refrigerate overnight. Thank you!

Nigella's Banoffee Cheecake (from KITCHEN) has a banana-flavoured cheesecake base that is anointed with a home-made toffee sauce. The bananas and brown sugar give the cheesecake a sightly buff colour. The yellowness comes from the yolks of the 6 eggs in the cheesecake batter. Egg yolk colour can vary but if you are able to then use free-range eggs, as these usually have a deeper yellow yolk.
The cheesecake needs to be chilled after baking and cooling so that it is firm enough to cut into slices and it is easiest to refrigerate the baked cheesecake overnight so that you are not tempted to cut into it before it has set properly and to allow for any slight differences in fridge temperatures. However, if you need to bake and serve the cheesecake on the same day then we would suggest planning on allowing for 8 hours refrigeration time, to let the cheesecake chill sufficiently.
