Our answer

Nigella's Gluten-Free Banana Bread is made with rice flour as this gives the banana bread a tender, crumbly texture when combined with the ground almonds (almond meal). It is probably possible to make the bread with a plain gluten-free flour mixture or all-purpose gluten-free baking blend, as these usually contain a proportion of rice flour and are developed specifically for baking.

Unfortunately we can't recommend using coconut flour as it is very absorbent and will tend to dry out the banana bread. For the corn flour, we are not sure if you are referring to UK cornflour (cornstarch) or US corn flour (very finely ground whole corn). It is not possible to use UK cornflour/cornstarch as it is also highly absorbent and will change the texture of the banana bread. For US corn flour, it might be possible to use it as an alternative to rice flour as it is made from the whole corn kernels. However, as we have not tried the banana bread with this ingredient, we are unable to guarantee the results if it is used as a substitute for the rice flour.
