Our answer

Nigella's Luscious Vegan Gingerbread (from COOK, EAT, REPEAT) is as sticky and spicy as the non-vegan equivalent. The recipe uses oat milk, which has a neutral flavour.

It is possible to use cow milk if you don't specifically need the cake to be vegan. We would suggest using semi-skimmed (reduced fat) or full-fat (whole) milk. For other plant-based milks, we would prefer to avoid coconut milk from a can as it has a high fat content and is quite sweet with a pronounced coconut flavour. But any plant-based milk that is not flavoured and is unsweetened should be a suitable substitute, such as almond, soy or rice milk. Just look for a product that has a fat content of 1-2% (1-2g fat per 100ml).
