Gingerbread Xmas Trees

Introduction

These trees a a doddle to make and make great Xmas gifts

Ingredients

Serves: 6

For the Gingerbread

  • 4 ounces softened butter
  • ½ cup brown sugar
  • ½ cup golden syrup or light corn syrup
  • 1 egg yolk
  • 2½ cups all-purpose flour
  • 2 tablespoons ground ginger
  • 1 teaspoon baking soda

For the Royal Icing

  • 1 egg white
  • 1½ cups confectioners' sugar
  • green food colouring

Method

Gingerbread Xmas Trees is a community recipe submitted by Jojo23 and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Cream butter and brown sugar in small bowl with electric mixer until light and fluffy. Beat in golden syrup or light corn syrup and egg yolk. transfer to large bowl and stir in sifted dry ingredients in 2 batches.
  • Press mixture into a ball and knead on lightly floured surface until smooth.
  • Wrap in cling wrap and flatten mixture and refrigerate for 30 mins.
  • Roll out dough between 2 sheets of baking paper to 4mm thickness.
  • Cut out stars (one of each size) Place on baking sheet lined with baking paper and bake in mod hot oven 190C for 8 mins until golden brown. When cool ice with royal icing.
  • ICING:

  • Mix egg white with electric beater until fluffy, add confectioners' sugar in 2 batches,
  • Set aside some icing white to ice small star for top of tree and make snow, colour remaining icing green and ice all stars. When icing is set stack stars on top of each other on an angle to resemble tree branches, join together with a dab of icing.
  • Pipe white icing onto ends of branches with star nozzle, drizzle icing around tree with small plain nozzle to resemble snow and dust with confectioners' sugar. Attach star to top of tree.
  • Additional Information

    If making a big tree (with Avon cutters) double ingredients. You will need a set of cookie cutter stars varying in size
