Our answer

Nigella's Flourless Chocolate Brownies With Hot Chocolate Sauce is a gluten-free brownie made with caster (superfine) sugar. Caster sugar will tend to give a slightly crisper crust to the brownies. Brown sugar is often used in brownies as it contains some molasses, a type of inverted sugar that can make baked goods moister and chewier. Brown sugar should work in the flourless brownie recipe, though they may have a slightly softer crust. You would use the same weight or volume as for caster sugar.

We would however suggest using (soft) light brown sugar or light muscovado sugar. These sugars have a fairly fine texture and the sugar will dissolve easily in the brownie batter. Dark brown sugar is much stronger in taste and may be a little too assertive for the brownie flavours. Golden caster sugar would also work well in the brownie recipe. We would avoid coarse or raw brown sugars and demerara sugar as these sugars have larger crystals, may not dissolve properly and will affect the texture of the brownie.
