Flourless Purple Velvet Torte

Preheat your oven to 180 C. Place the grated beet and sugar in a medium sized pot and bring to a boil. Cover and lower to simmer and cook for about half an hour or until the beet is soft. Blend this mixture until smooth. Beat in eggs, oil, vanilla, almond extract, unsweetened cocoa and salt until well mixed. Pour into a well greased 9 inch cake pan and bake for 30 - 35 mins until a knife inserted in the center comes out clean.

- 2½ cups grated beets
- 1 cup sugar (or sweetener)
- 4 medium eggs
- ½ cup grapeseed oil
- 1 tablespoon vanilla extract
- ½ teaspoon almond extract
- ½ cup unsweetened cocoa
- ½ teaspoon sea salt
