Full question
I don’t have demerara sugar. Can I use any other sugar such as muscovado or soft brown sugar for glazing the Ham In Coca Cola?
Our answer
Nigella's Ham In Coca Cola (from NIGELLA BITES) is finished in a hot oven, where the treacle and sugar spread on the surface of the ham turns into a burnished, sticky crust. Demerara sugar is a raw cane sugar with crystals that are slightly larger than the crystals for other sugars. It has a slightly caramelly taste and the larger crystals are useful here as they don't dissolve as quickly as some other sugars. The sugar may also be labelled as "sugar in the raw" or "raw cane sugar".
If you can't find demerara or raw cane sugar then you could use soft light brown sugar or light muscovado sugar. However as the crystals are smaller and the sugar will start to dissolve as soon as it comes into contact with the treacle-coated ham, we suggest that you work quickly and put the ham in the oven as soon as is coated.
