Full question

Can I substitute the unsalted butter in the lemon polenta cake recipe for plant-based "Flora Buttery" please? My Grandson can eat eggs, just not butter.

Our answer

Nigella's Lemon Polenta Cake (from KITCHEN) is a popular gluten-free cake that starts by creaming together butter and sugar. It is possible to use a non-dairy alternative for the cake. The product mentioned comes in a container and has a high fat content (79%), which makes it suitable for baking. The product may contain a small amount of salt, but this should not affect the cake's taste or texture. We would also mention that the same company produces an unsalted "plant butter" in a block that is specifically for baking and would be a good alternative to butter.

We would also mention that in the "additional information" box, below the main method, Nigella suggests light and mild olive oil as an alternative to the butter. Use 150ml (2/3 cup) of the oil instead of the butter and whisk the oil and sugar together throughly in step 3 of the recipe.
