The Rosewater Hearts are SO tasty and my family LOVES them. What would happen if you only used rice flour and not all-purpose flour?
Our answer
Nigella's Rosewater Hearts are shortbread-like cookies that are very gently perfumed with rosewater. The ingredients use a combination of plain (all-purpose) flour and rice flour. The rice flour gives the cookies a very slightly grainy, short and crumbly texture and helps them to melt in the mouth.
Unfortunately we are not sure that using all rice flour will work for the cookies as they will become very tender and difficult to handle. If you wanted to make the cookies gluten free then it may be easier to substitute a gluten-free plain (all-purpose) flour blend or baking blend for the plain flour or even for both the plain flour and the rice flour (as most blends contain rice flour already). Also as the dough needs to be rolled out a blend that contains some xanthan gum may be helpful. It may also help to roll out the dough in between two pieces of baking parchment (parchment paper) as it will crack more easily. However, as we have not tried the cookies with all gluten-free flours, we are unable to guarantee the results.
