Can I Use Buckwheat Flour For The Gluten-Free Banana Bread?

Hi, I would like to know if I can substitute buckwheat flour for rice flour in the delicious GF banana cake recipe? I always end up with buckwheat flour needing to be used up after making your fabulous cookies. Thanks.

Our answer

Nigella's Triple Chocolate Buckwheat Cookies (from SIMPLY NIGELLA) are gluten-free cookies made with buckwheat. Buckwheat is not actually a wheat grain but is a member of the knotweed family.

It may be possible to use buckwheat in the Gluten-Free Banana Bread but this is made with rice flour, which absorbs a different amount of liquid. So you will not get the same results and we can't guarantee how the banana bread would turn out. Buckwheat may well work in the Chocolate Tahini Banana Bread as this recipe works with both gluten-free and wheat flours. However, the combination of buckwheat and tahini may be slightly too bitter for some people. If you are able to use regular flour then it may be possible to use half buckwheat and half wheat flour in some recipes, such as the regular Banana Bread or the Chocolate Banana Muffins. But again, as we have not tried these recipes with a buckwheat variation, we are unable to guarantee the results.
