Full question
Can I use caster sugar in the Vanilla Fudge instead of granulated sugar, as it's going to be melted, or does it have to be granulated?
Our answer
Nigella's Vanilla Fudge recipe makes a traditional fudge that has a slightly grainy, crumbly texture. Nigella suggests using granulated sugar, mainly as in the UK granulated sugar is cheaper than caster sugar and is more economical if you are using a large quantity.
You can use caster sugar instead and the finer crystals of caster sugar should mean that they dissolve more quickly as you heat the mixture up. Golden caster sugar can be a nice alternative if you can buy this, though is a little more expensive then regular caster sugar. In the US and Europe, granulated sugar has finer crystals than British granulated sugar and is fine to use for this recipe.
