I am cooking for only two people so sometimes find a whole chicken too big and expensive . Can I use chicken thighs with the bone in for the Chicken With Garlic Cream Sauce, instead of a spatchcock chicken?

Nigella's Chicken With Garlic Cream Sauce (from COOK, EAT, REPEAT) is roast chicken that is served with a sauce made from garlic infused cream and the cooking juices from the chicken. The chicken is spatchcocked as this helps the chicken to cook quickly and evenly.
If you don't want to use a whole chicken then skin-on and bone-in chicken thighs would be fine for a smaller number of people. You will probably need 2-4 thighs for two people, depending on the size of the thighs and also your appetites. Use just enough salt to season the thighs on the flesh side and skin side and one medium garlic clove to grate over. For the liquid in the base of the roasting pan, it will slightly depend on the size of your pan. If your roasting pan is on the smaller size and there is not too much space around the chicken thighs then use a half quantity of the vermouth and water. But if the pan is large then you may need to use the full quantity, as a fair amount will evaporate during cooking. Chicken thighs usually take 30-40 minutes to cook, but do check they are cooked through before serving. It is fairly easy to halve the quantities of the garlic cream sauce. However, leftovers of the sauce will keep in the fridge for up to 3 days and are good with other meats or fish, baby potatoes, pasta and steamed green vegetables (or pretty much anything), so you may like to make a full quantity. If you do make a full quantity of the sauce then also use the full amount of water and vermouth in the roasting pan.
