Full question
Can you use chicken thighs for the Saffron Scented Chicken Pilaf or must it be chicken breasts?
Our answer
Nigella's Saffron-Scented Chicken Pilaf (from NIGELLA SUMMER) marinates chunks of chicken breast meat in a mixture of yogurt, lemon and cinnamon. The chicken is then quickly pan fried until cooked through, before being added to the aromatic rice.
Chicken breast is quite lean, so this dish is particularly good for this type of meat. However, we are big fans of chicken thighs because they generally have more flavour and moister flesh than chicken breast and as the meat is cubed and marinated there is no reason why chicken thighs could not be used instead of chicken breast. Just use the same weight of skinless, boneless chicken thighs (also sold labelled as chicken thigh fillets) and cut them into roughtly 2cm/3/4-inch chunks before marinating.
