Can I Use Cow Milk For A Non-Vegan Version Of The Luscious Vegan Gingerbread?

Asked by jp2318. Answered on 17th January 2023

Full question

Never tried the Luscious Vegan Gingerbread before. I just need a recipe to be egg-free and the milk doesn't matter. Can I just use the cow milk that I have already at home? Thanks!

Our answer

Nigella's Luscious Vegan Gingerbread (from COOK, EAT, REPEAT) is egg free and uses oat milk, so it is vegan friendly but will be loved by everyone.

Oat milk usually has a fat content of 1.5-2%. This is similar to semi-skimmed cow milk and we don't see any reason why you could not use this cow milk as an alternative if the gingerbread doesn't need to be completely vegan. Full-fat (whole) milk should also be fine, but we would avoid using skimmed (non-fat or fat-free) milk as it will be slightly too watery. You may also like to consider Nigella's Dark And Sumptuous Chocolate Cake, which is vegan but the sponge is egg free and the frosting can be made with regular butter rather than coconut butter.
