Can I Use Different Nuts For Forgotten Cookies?

Is it possible to substitute the pistachios for other nuts in the recipe for Forgotten Cookies? I was thinking maybe hazelnuts?

Our answer

Nigella's Forgotten Cookies (from AT MY TABLE) are meringue-like cookies that are left to cook in an oven that is preheated and then left to cool. The cookies are flavoured with cardamom and include chopped pistachios and chocolate chips.

The green colour of the pistachios is attractive but if you can't use pistachios then hazelnuts or almonds would be good alternatives. We would suggest using the skinned/blanched versions of these nuts. These nuts are paler than pistachio nuts, so you may like to chop them and then toast them lightly in the oven and then let them cool completely before using for the cookies.
