Can I Use Drambuie For The Advocaat And Ginger Cake?

Asked by sarahandcass. Answered on 19th November 2024

Full question

I can't buy Advocaat here in the US. I followed Nigella's suggestion to make my own by adding brandy to custard. It wasn't really sweet enough for me. Could I use Drambuie instead of brandy? Or ginger liqueur perhaps?

Our answer

Nigella's No-Bake Advocaat And Ginger Cake is a layered dessert made from sticky ginger cake and a light, rich cream flavoured with advocaat. Advocaat is a liqueur traditionally made from eggs, sugar and brandy. Some advocaats also have cream added, to give a more eggnog-like drink. Various brands are available and you can usually find liquor stores that sell it in the US. However, Nigella has suggested an alternative to Advocaat made by adding brandy to crème anglais or custard.

If you found this mixture to not be sweet enough then you could always add some extra icing (confectioners') sugar to the custard mixture to sweeten it more, or taste the mascarpone cream mixture and add more sugar if necessary. However if you add the sugar to the mascarpone mixture then be careful not to overmix as the mascarpone cream can thicken too much if it is whipped for too long. Drambuie is a whisky and honey liqueur, so is slightly sweeter than brandy but we are not sure that it will be that much sweeter. However, if you have some Drambuie and prefer to use this then it should be fine in the cake.
