Can I Use Egg Whites From A Carton To Make The Chocolate Pavlova?

Asked by Gemhalljan. Answered on 20th May 2022

Full question

Will I get the same results from a carton of liquid egg whites for the Chocolate Raspberry Pavlova meringue? I always usually use fresh whites but I have a carton in the fridge.

Our answer

Nigella's Chocolate Raspberry Pavlova (from NIGELLA SUMMER) uses 6 large egg whites. You can use fresh egg whites or fresh egg whites that have been frozen, and it is a good idea to freeze any leftover whites you have for future use. Put the whites in a small freezer bag or airtight container (making sure that they are completely grease-free), label with the nuber of whites and freeze for up to 3 months. You can also use egg whites from a carton.

If using liquid egg whites from a carton make sure that they are plain and unseasoned. Usually two tablespoons of liquid egg whites are equivalent to one large egg white. Liquid egg whites from a carton are pasteurized and that can make them a little more difficult to whisk, so we suggest using a hand or freestanding mixer. Also, please note that pasteurized egg whites from a carton do not whisk well if they have been frozen and thawed.
