Start beating egg whites to soft peak stage. Add vinegar and boiling water, continue beating. Slowly add 2 of the cups of confectioners' sugar, bit by bit beating the whole time. Lastly add the last cup of confectioners' sugar(all at once) together with the baking powder and vanilla essence, beat. Build whatever shape you would like making sure the sides are higher. I always cut up a cardboard box to the size I need(and what will fit in my oven!!) cover this with foil, shiny side to the inside. Bake at 150' C for 1 hour, then turn the oven down to 100'C for another 30 minutes. aloow to cool and when needed fill with a mixture of greek yoghurt and beaten cream. add seasonal fruit. best when prepared at least an hour in advance.
