Can I use ordinary flour for the Scented Citrus Cake if I do not need it to be gluten free?
Our answer
Nigella's Scented Citrus Cake (from AT MY TABLE) is a gluten-free cake made with a combination of rice flour and ground almonds (almond meal). This combination gives the cake a deliciously moist and tender texture.
Unfortunately, we have not tried the cake with regular plain (all-purpose) flour and we do not think that it would be a particularly good substitute for either the almonds or the rice flour. The almonds are needed to provide moisture, as they contain oil. Rice flour does not absorb as much liquid as regular flour, so using regular flour could make the cake drier and slightly stodgy. It may be possible to use polenta as an alternative to the rice flour, though if you have polenta to hand we would suggest trying Nigella's Lemon Polenta Cake.
