Can I Use Flour In The Clementine Cake?

If I haven’t got enough ground almonds to make the Clementine Caker, can I substitute some with flour instead?

Our answer

Nigella's Clementine Cake (from HOW TO EAT) is a moist citrussy cake that is made with whole cooked clementines. As the cake uses ground almonds (almond meal) instead of flour it is suitable for coeliacs and people with wheat intolerances.

We would prefer not to use regular flour in the cake as it won't be quite as moist as one made with all almonds. Some cakes, such as Nigella's Chocolate Olive Oil Cake can be made with either flour or almonds, though you do not substitute the flour one for one. So the cake may work if you are only substituting in a small amount of flour (up to 50g) but unfortunately as we haven't tried this ourselves, we are unable to guarantee the results. And with flour the cake will no longer be suitable for coeliacs or those with wheat intolerance.
