Hello! Can maple syrup be replaced by honey for the Toasty Olive Oil Granola? If so, what would be the quantity required ? Many thanks.

Nigella's Toasty Olive Oil Granola (from SIMPLY NIGELLA) is a delicious combination of warmly-spiced toasted oats, nuts and mixed seeds. The ingredients are coated with olive oil and maple syrup, which helps to turn the granola crunchy and slightly sweet as it toasts in the oven.

You can replace the maple syrup with a clear or runny honey and you would use the same amount (125ml or 1/2 cup). We would suggest using a mildly-flavoured honey, as some honeys have a prominent flavour which could dominate the granola. Honey tends to be slightly more viscous than maple syrup so you may have to whisk a little harder to combine the oil and honey. If it is proving difficult then you can gently warm the honey to thin it slightly and then mix it with the oil. You might also like to try Andy's Fairfield Granola, which uses a combination of rice malt syrup (or golden syrup) plus honey.
