The Toasty Olive Oil Granola sounds wonderful! Could this be done in an air fryer instead of the oven?
Our answer
Nigella's Toasty Olive Oil Granola (from SIMPLY NIGELLA) is less sweet than many granolas, but still delicious and satisfying and perfect as a snack or for breakfast with berries and yogurt. The granola is cooked in a low oven, so that it becomes crunchy but not burnt.
Unfortunately we are not sure that this recipe will work particularly well in an air fryer as the ingredients need to be spread out in a thinnish layer on a large baking sheet. The large exposed surface area helps to dry out the granola, making it crunchy. In an air fryer basket the mixture is too compact and you would need to keep stopping and stirring the granola in the basket, plus it may not cook as evenly this way. Also, air fryer baskets and racks have many holes as this helps the heat to circulate efficiently. But it also means that smaller ingredients, such as oats, will fall through the holes and into the bottom of the airfyer, making cleanup more difficult. So although air fryers are wonderful for cooking many things, we think that this granola is better if cooked in a regular oven.
