Can I Use medium Eggs For The Banana Bread?

Full question

I want to make the Banana Bread as I have bananas which have been lingering in the freezer. I only have medium or mixed eggs and not large. Should I add more liquid to the recipe?

Our answer

Nigella's Banana Bread (from HOW TO BE A DOMESTIC GODDESS) is studded with rum-soaked raisins. The bread is particularly good if made with overripe bananas and frozen and defrosted bananas are fine, but remember to also use all of the liquid that separates out from the bananas as they defrost.

The recipe suggests UK large eggs but if you only have medium eggs then this is fine. British eggs have a weight range of 73-73g and medium are 53-63g. So a larger medium egg is almost the same as a smaller large egg. And for two eggs combined the difference between using two medium and two large eggs is likely to be only 20g, or around 4 teaspoons. If you have a box of medium-sized eggs then you can always try to pick out the two largest eggs in the box. Eggs provide leavening and moisture, as do bananas. So using medium rather than large eggs is unlikely to make a big difference to the finished banana bread.
