Ingredients

Serves: -

  • 1 cup all-purpose flour
  • 1 cup unsweetened shredded coconut
  • ⅗ cup brown sugar
  • 1 cup quick-cooking oats
  • 4 ounces butter
  • 1 tablespoon golden syrup or light corn syrup
  • ½ teaspoon baking soda
  • 2 tablespoons boiling water

  • Preheat oven to 160c/315f.
  • Place the dry ingredients in a bowl, mix well.
  • Place butter & syrup in a pan over medium heat and melt.
  • Place the bicarb and water in a bowl and stir to combine.
  • Add the bicarb to the saucepan.
  • Add the liquids to the dry ingredients and mix together.
  • Roll teaspoons of the mixture into balls and place on a greased and lined baking tray. Flatten each ball gently with a fork.
  • Bake for 15-20 minutes, allow to cool.
  • Makes approx 20 biscuits.
