Can I Use Mussels In The Roasted Seafood Dish?

Asked by chris.power3. Answered on 24th January 2022

Full question

I'm afraid I avoid clams following an unfortunate incident with clam chowder in the USA many years ago. My question is - can I substitute mussels in the Roast Seafood recipe?

Our answer

Nigella's Roast Seafoood (from KITCHEN is a simple and elegant dish where prawns (shrimp), clams and squid are cooked on a bed of roasted potatoes. The juices released from the seafood help to flavour the potatoes, along with lemon, garlic and the anise notes of dry white vermouth.

We suspect that it would be fine to use mussels instead of clams, as the 15 minutes of cooking time should be enough for mussels. Mussels vary in size, but on average you should get about 16 regular-sized mussels in 350g (12 ounces). You should wash the mussels well, remove any beards attached to the mussels and discard any that are open and don't close when you tap them. After removing from the oven, discard any mussels that have not opened up during cooking.
