Can I use panko for the Crispy Lamb Chops? I always have panko on hand but not always stale bread.

Our answer

Nigella's Crispy Lamb Chops (from NIGELLA SUMMER) are lamb cutlets (rib chops) that are pounded until the meat is thin, then coated in bredcrumbs and shallow fried until crispy. Nigella uses breadcrumbs made from slightly stale bread, but we suspect that you could use panko breadcrumbs as an alternative. Panko are Japanese breadcrumbs that are slightly coarse but crisp and light and usually used for chicken and pork katsu, so made a particularly crunchy coating. Use the same quantity as you would for the fresh breadcrumbs.

Home-made breadcrumbs freeze well, so we would suggest that next time you have some stale bread, pulverize it into breadcrumbs and then freeze the breadcrumbs in resealable bags. They will keep for 3 months in the freezer and can be used direct from frozen.
