I have some canned passionfruit. What amount would be the equivalent of using 11 passion fruit required in your recipe for Passion Fruit Curd?

Our answer

Nigella's Passionfruit Curd (from FEAST) is made with passion fruit rather than lemons, but the sharp flavour of passionfruit works well in the curd. If you are using passionfruit puree from a can, or frozen or from a pouch then you need to make sure that it is usweetened (without added sugar). Pasteurised passionfruit in cans and pouches can also taste less sharp, so you may want to add a little lemon or lime juice to the pulp before you use it. Passionfruit pulp is usually without seeds. If your pulp contains seeds then strain out the seeds before using the measurements below.

One medium passionfruit contains about 2 tablespoons of seeds plus pulp - made up of about 1 tablespoon of seeds and around 1 tablespoon of pulp. So for 11 passionfruit you would need 11 tablespoons (or 165g/165ml/generous 2/3 cup). Bear in mind that one of the passionfruit is reserved with seeds so we suggest that you set aside one tablespoon of the pulp to stir in at the end and you could increase this to 2 tablespoons if the curd is too sweet.
