Can I replace the Marsala wine with port in the Fig And Olive Chutney recipe? I have all the other ingredients and we don't use Marsala in anything else so would port suffice? Thanks.
Our answer
Nigella's Fig And Olive Chutney (from Nigellissima and on the Nigella website) is an easy chutney to make as all of the chopping is done in a food processor and the chutney cooks relatively quickly. The recipe uses Marsala wine as it has a slightly nutty flavour and also is an Italian fortified wine and in tune with the Italian spirit of Nigellissima.
The Marsala used is the dry version and you could substitute some other fortified wines in lieu. A dry Madeira is a good alternative or you could use port. Try to use a dry port rather than a very sweet one, but if yours is a sweet version then it should not make too much difference or you could reduce the sugar by a teaspoon or two. Please note that the chutney keeps for 1 month in the fridge, or follow the instructions for storing in sterilized jars where it will keep in a cool, dry place for up to 3 months (but once opened keep in the fridge and use within 1 month).
