Full question
Can I use rice instead of orzo for the Meatballs With Orzo? And will the amounts of rice be the same as for pasta, and the same amount of liquid?
Our answer
NIgella's Meatballs With Orzo (from AT MY TAVLE) is a comforting one-pot dish where metballs are simmered in tomato sauce then orzo pasta is cooked in the same sauce, absorbing a lot of the flavours.
You could use pasta instead or orzo. A long-grain rice is the best option and the rice is likely to only need 10 minutes of cooking time as if you overcook rice it will become mushy. If you use rice we would suggest using 250g (1¼ cups) as rice absorbs more liquid than pasta. However, keep an eye on the pot and add extra water if it looks like it is becoming too dry.
