NIgella's Butternut Squash With Pecans And Blue Cheese (from NIGELLA EXPRESS) is a delicious combination of sweet, salty, soft and crunchy ingredients. It can be served either as a side dish or as a lunch or supper dish (possibly with the addition of some green leaves).

Butternut squash is good for roasting as the natural sugars caramelize on the outside and the flesh becomes soft. We suspect that sweet potatoes would be a good substitute if you can't find butternut squash. There is no need to peel the sweet potatoes, just scrub the skins and then cut into 2-3cm (approx. 1-inch) pieces. The oven temperature should be the same and the cooking time should be very similar, just keep an eye on the potatoes after the first 25 minutes of cooking and remove from the oven when they are caramelized on the outside and soft in the centre.
