Is the Clementine Cake freezable? If not, how long will it keep, wrapped tightly and put in a tin?

Our answer

Nigella's Clementine Cake (from HOW TO EAT) is a moist, gluten-free cake that does freeze well. Once the cake has cooled completely, unspring it from its tin but leave it on the base as the cake is quite tender and fragile and this will help to support the cake. Wrap the cake in a double layer of clingfilm (plastic wrap) and a layer of foil and freeze for up to 3 months. To defrost the cake, unwrap it and leave at room temperature for 3-4 hours.

The cake will usually keep well in an airtight container in a cool place for up to 7 days. However as it is a moist cake it does not keep as well in warm or humid environments, so if it is hot weather then it is better to store the cake in a container in the fridge for up to 5 days. Remove the cake from the fridge about an hour before serving, to let it come up to room temperature.
