Our answer

Nigella's Lemon Meringue Cake (from FEAST) has thin discs of sponge cake that are topped with meringue. As the sponge contains wheat flour and cornflour (cornstarch), it is not suitable for Passover.

Unfortunately we do not think that it is particularly easy to substitute matzo cake meal for the wheat flour. Matzo cake meal is very finely ground matzo. As the matzo have already been cooked, the cake meal does not absorb liquid in the same way that flour does. You also need to adjust quantities if using matzo cake meal. Instead, we would suggest trying Nigella's Lemon Pavlova (from SIMPLY NIGELLA). This has meringue, whipped cream and lemon curd and is a very popular recipe. You can use potato starch instead of cornflour for the meringue and omit the flaked (sliced) almonds if necessary.
