Caramel Croissant Pudding

Full question
Hello, I'm so excited about making Nigella's Caramel Croissant Pudding (Gratin) for a dinner party. I will be doubling the recipe. I was just wondering if I can make this dessert the day before and re-heat it? Thanks, fingers crossed! All best, Diana Adams
Our answer
Nigella's Caramel Croissant Pudding from Nigella Express is a delicious variation on a traditional British bread and butter pudding. Whilst it is possible to make the pudding in advance it is not something we would particularly advise for a party, as to reheat the whole pudding could cause it to become a little dry. Individual portions of leftovers can be reheated in a regular oven preheated to 180c/350F (covered tightly with foil) or in a microwave (following the manufacturer's instructions).
It is possible to make the caramel cream sauce the day before (to step 5, without adding the eggs) and this can be stored in the fridge until needed. The pudding can then be assembled about 2 hours before it is needed and put into the oven at the appropriate time.
If you are doubling the quantities and using one larger dish then you will need to adjust the baking time for the pudding, and this will depend on the size and depth of the dish. The dessert is also quite rich so although the recipe states that it serves 2, you may find that after a large dinner the quantity will be sufficient to serve 3-4.
